Peanut Swiss Roll Recipe

Ingredients

  • 7 eggs
  • 120g caster sugar
  • 140g plain flour
  • 60g peanut butter
  • 20g butter
  • 100g peanut butter
  • 100g butter cream

Direction

  1. Using an electric mixer on full speed, beat eggs and sugar until light and fluffy. Gently fold in sifted flour, add in melted butter and mix till well combined.
  2. Spread batter evenly into a greased rectangular tin. Bake for the cake in preheated oven for 10 minutes at 200ºC. Leave to cool.
  3. Combine peanut butter and butter cream.
  4. Turn cake onto a paper, spread with peanut butter cream. Roll gently from narrow end, using paper to lift cake and guide roll.
