Kiwi Fruit Swiss Roll Recipe

Ingredients

  • 3 eggs
  • 60g caster sugar
  • ¼ tsp vanilla essence
  • Few drops of green coloring
  • 70g plain flour
  • 40g butter, melted
 Roll Filling
  • 100g fresh cream, whipped
  • 3 tbsp kiwi fruit topping jam
  • 5 kiwi fruit, peeled

Method

  1. Preheat the oven first to temperature of 200ºC, then grease a 10 x 14 inches rectangular cake pan.
  2. Beat eggs and sugar until fluffy. Add in essence and green coloring, mix well. Gently fold in sifted flour, add in melted butter, mix until well combined.
  3. Spread mixture into tin. Bake for 8 minutes. Leave to cool.
  4. Turn cake onto a paper, spread with whipped cream, drizzle with kiwi topping jam. Arrange whole kiwi fruit along one long side of edge. Roll gently, using paper to lift cake and guide roll. Stand in the fridge.
  5. Garnish the roll with kiwi fruit and strawberry. Slice and serve the rolls.
