Rambutan Pie Recipe

Ingredients

 Pie Crust Ingredients
  • 200 g plain flour
  • 60 g caster sugar
  • 120 g butter
  • 1 egg yolk
 Rambutan and Nuts Filling
  • 120 g butter, softened
  • 100 g caster sugar
  • 2 eggs
  • 60 g brown rice cereal
  • 60 g plain flour
  • 1 can of rambutan fruit, drained and wedged
  • 60 g brazil nuts, halved
  • 4 tablespoons almond flakes

Method

  1. To make crust, combine flour and sugar. Rub in butter, add in egg yolk to form dough.
  2. Press dough into molds.
  3. To make filling, combine softened butter with sugar. Add in eggs, then add in brown rice cereal and flour until well blended.
  4. Pipe the batter into molds, decorate with rambutan and brazil nuts. Sprinkle with almond flakes. Bake in preheated oven at 180ºC for 30 minutes until cooked.
