Pie Crust Ingredients
- 200 g plain flour
- 60 g caster sugar
- 120 g butter
- 1 egg yolk
Rambutan and Nuts Filling
- 120 g butter, softened
- 100 g caster sugar
- 2 eggs
- 60 g brown rice cereal
- 60 g plain flour
- 1 can of rambutan fruit, drained and wedged
- 60 g brazil nuts, halved
- 4 tablespoons almond flakes

Method
|
- To make crust, combine flour and sugar. Rub in butter, add in egg yolk to form dough.
- Press dough into molds.
- To make filling, combine softened butter with sugar. Add in eggs, then add in brown rice cereal and flour until well blended.
- Pipe the batter into molds, decorate with rambutan and brazil nuts. Sprinkle with almond flakes. Bake in preheated oven at 180ºC for 30 minutes until cooked.
