Seaweed Muffin Recipe

Ingredients

  • 100g butter
  • 100g shortening
  • 100g icing sugar
  • 4 eggs, beaten
  • 100g almond powder
  • 120g cake flour
  • ½ tbsp baking powder
  • 2 tbsp seaweed powder
  • 30g ham, chopped finely
  • 50g hard Brie cheese, chopped finely

Direction

  1. Thaw refrigerated butter. Beat together with shortening till pale yellow. Add icing sugar and beat till fluffy and pale yellow.
  2. Pour in beaten eggs over 4 times and mix well.
  3. Sift in cake flour and baking powder. Stir in almond powder followed by ⅔ seaweed powder. Add cheese and ham and mix well.
  4. Pour mixture into greased paper cups till 80% full. Lightly compact.
  5. Sprinkle with remaining seaweed powder. Bake at 170ºC for 18 to 20 minutes.
