Fig Muffin Recipe

Ingredients

  • 3 whole eggs
  • 90g granulated sugar
  • 100g vegetable oil
  • 200g cake flour
  • 1 tsp baking powder
  • ½ tsp baking soda
 Candied Mashed Fig
  • 70g fig, mashed
  • 20ml milk
  • 200g dried fig
  • 55ml water
  • 35g granulated sugar

Method

 Preparing Candied Mashed Fig
  1. Steam dried figs until soft in steamer. Cook water and sugar until boiling, add steamed figs and soak.
 Preparing Fig Muffins
  1. Combine eggs and granulated sugar well and beat until 70% fluffy.
  2. Add vegetable oil to mix.
  3. Fold in sifted cake flour, baking powder and baking soda. Beat until even.
  4. Add mashed fig and milk. Beat until well blended.
  5. Pour batter into pudding cups, lined with paper cups first. Preheat oven to 180ºC (upper heating element) and 150ºC (lower heating element). Bake for about 20 minutes.
  6. Line pudding cup with paper liner to prevent the muffin from changing shape.
 Baking Tips
  1. Do not beat eggs and sugar over fluffy or the pores of the cake will be coarse and big.
