| Fig Muffin Recipe |
Ingredients |
- 3 whole eggs
- 90g granulated sugar
- 100g vegetable oil
- 200g cake flour
- 1 tsp baking powder
- ½ tsp baking soda
Candied Mashed Fig
- 70g fig, mashed
- 20ml milk
- 200g dried fig
- 55ml water
- 35g granulated sugar

Method

Preparing Candied Mashed Fig
- Steam dried figs until soft in steamer. Cook water and sugar until boiling, add steamed figs and soak.
Preparing Fig Muffins
- Combine eggs and granulated sugar well and beat until 70% fluffy.
- Add vegetable oil to mix.
- Fold in sifted cake flour, baking powder and baking soda. Beat until even.
- Add mashed fig and milk. Beat until well blended.
- Pour batter into pudding cups, lined with paper cups first. Preheat oven to 180ºC (upper heating element) and 150ºC (lower heating element). Bake for about 20 minutes.
- Line pudding cup with paper liner to prevent the muffin from changing shape.
Baking Tips
- Do not beat eggs and sugar over fluffy or the pores of the cake will be coarse and big.
