Cranberry Muffin Recipe

Ingredients

  • 160g butter
  • 60g shortening
  • 110g icing sugar
  • 3 eggs, beaten
  • 170g cake flour
  • ½ tsp baking powder
  • 50g almond powder
  • ¼ cup dried cranberries
  • ¼ cup fresh milk

Direction

  1. Beat butter and shortening together till fluffy. Add icing sugar, beaten eggs, cake flour, baking powder and almond powder. Stir well to form batter.
  2. Add dried cranberries and mix well.
  3. Thaw refrigerated fresh milk. Pour into batter over 2 to 3 times and mix well.
  4. Pour mixture into greased paper cups till 80% full. Bake at 170ºC for 18 to 20 minutes.
