Chocolate Muffin with Almond Flakes Recipe

Ingredients

  • 200g butter
  • 200g cake flour
  • 80g icing sugar
  • 4 whole eggs
  • 20g cocoa powder
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 30g sugar
  • A handful of almond flakes

Preparation

  1. Thaw refrigerated butter. Beat in mixing bowl. Add icing sugar then beat till mixture is fluffy and pale yellow.
  2. Separate egg yolks from 2 eggs, reserving egg white. Beat 2 whole eggs and 2 egg yolks together. Pour into butter mixture over 3 times and mix well. Set aside.
  3. Whisk egg white in mixing bowl till frothy. Add sugar and whisk again (without stiff peaks formed).
  4. Combine cake flour, cocoa powder, baking soda and baking powder. Sift together into butter mixture and mix well to form batter.
  5. Rapidly stir whisked egg white into batter over 3 times. Stir in almond flakes.
  6. Pour mixture into greased paper cups till 80% full. Sprinkle with some almond flakes on top. Bake at 170ºC for 18 to 20 minutes.
