- 250 g/ 8¾ oz of self-raising flour
- ½ tsp of baking powder
- 2 eggs
- 100 g/ 3½ oz of brown sugar
- ½ tsp of cinnamon powder
- ½ cup of milk
- 3 tbsp of melted butter
- 1 cup of peeled green apple, chopped finely
- ¼ cup of candied ginger

- Prepare the oven by preheating it to 200°C/
390°F.
- Put aluminum foil cups in the muffin tins.
- Sift flour, baking powder, salt and cinnamon.
- Add sugar and continue blend the mixture until well combined.
- Stir egg mixture, diced green apple and candied ginger into flour mixture till just blended.
- Spoon the batter evenly on each prepared muffin tin.
- Bake the muffins for 20 minutes until the muffins turned golden brown.
- This recipe produces around 6 muffins.
