Candied Ginger Apple Muffin Recipe

  • 250 g/ 8¾ oz of self-raising flour
  • ½ tsp of baking powder
  • 2 eggs
  • 100 g/ 3½ oz of brown sugar
  • ½ tsp of cinnamon powder
  • ½ cup of milk
  • 3 tbsp of melted butter
  • 1 cup of peeled green apple, chopped finely
  • ¼ cup of candied ginger
  1. Prepare the oven by preheating it to 200°C/ 390°F.
  2. Put aluminum foil cups in the muffin tins.
  3. Sift flour, baking powder, salt and cinnamon.
  4. Add sugar and continue blend the mixture until well combined.
  5. Stir egg mixture, diced green apple and candied ginger into flour mixture till just blended.
  6. Spoon the batter evenly on each prepared muffin tin.
  7. Bake the muffins for 20 minutes until the muffins turned golden brown.
  8. This recipe produces around 6 muffins.
