Banana Muffins

Baking Overview

  • Ingredients

    Muffin

    A

  • 4 Eggs
  • 2 Egg Yolks
  • 100 g of Sugar
  • B

  • 200 g of Fresh Bananas (mashed)
  • 1 tsp of Banana Flavor
  • C

  • 180 g of High Protein Flour
  • 30 g of Milk Powder
  • tsp of Sodium Bicarbonate
  • tsp of Baking Powder
  • D

  • 180 g of Unsalted Butter (Melted)
  • Crunchy Walnut Topping

  • 50 g of Unsalted Butter
  • 80 g of Plain Flour
  • 30 g of Brown Sugar
  • 100 g of Chopped Walnut
  • Directions

    Muffins Preparation

    1. Beat ingredients A till light and creamy.
    2. Then blend in ingredients B and mix well.
    3. Sift ingredients C. Fold in and blend well.
    4. Add in melted butter. Mix till well combined.
    5. Pour the mixture into muffin cups, then sprinkle with crunchy walnut topping and bake at 170°C to 180°C for 20 minutes.

    Crunchy Walnut Topping Preparation

    1. Combine flour, brown sugar and butter.
    2. Stir in chopped walnts and keep in refrigerator for 15 minutes.
