| Apple and Oatmeal Muffin Recipe |

- 150g unsalted butter
- 120g icing sugar
- 150g cake flour
- 50g all purpose flour
- ¼ tsp baking soda
- ¼ tsp baking powder
- 3 eggs
- ½ cup oatmeal
- 2 apples
- ¼ cup raisins
- 20ml rum

- Thaw refrigerated unsalted butter. Beat in mixing bowl. Add icing sugar then beat till mixture is fluffy and pale yellow.
- Combine cake flour, all purpose flour, baking soda and baking powder. Sift into butter mixture and mix well.
- Beat 2 whole eggs and 1 egg yolk together. Pour into butter mixture over 4 times and stir well. Toss in oatmeal and stir well to form batter.
- Peel apples and remove seeds. Cut apples into cubes. Add apple cubes and raisins into batter, then stir in rum. Pour mixture into greased paper cups till 80% full. Lightly compact. Bake at 170ºC for 18 to 20 minutes.
