Apple and Oatmeal Muffin Recipe

Ingredients

  • 150g unsalted butter
  • 120g icing sugar
  • 150g cake flour
  • 50g all purpose flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • 3 eggs
  • ½ cup oatmeal
  • 2 apples
  • ¼ cup raisins
  • 20ml rum

Direction

  1. Thaw refrigerated unsalted butter. Beat in mixing bowl. Add icing sugar then beat till mixture is fluffy and pale yellow.
  2. Combine cake flour, all purpose flour, baking soda and baking powder. Sift into butter mixture and mix well.
  3. Beat 2 whole eggs and 1 egg yolk together. Pour into butter mixture over 4 times and stir well. Toss in oatmeal and stir well to form batter.
  4. Peel apples and remove seeds. Cut apples into cubes. Add apple cubes and raisins into batter, then stir in rum. Pour mixture into greased paper cups till 80% full. Lightly compact. Bake at 170ºC for 18 to 20 minutes.
