  • Ingredients

    Sponge Cake

    A

  • 300 g of Sponge Cake Mix
  • 5 Eggs
  • 60 ml of Water
  • B

  • 60 g of Melted Butter
  • Kiwi Mousse

    A

  • 15 g of Gelatin
  • 50 ml of Water
  • B

  • 150 g of Sugar
  • 90 g of Egg Yolks
  • C

  • 200 ml of Milk
  • D

  • 150 g of Kiwi Puree
  • E

  • 150 g of Fresh Cream
  • F

  • 250 g of Kiwi Jam
  • Preparation

    1. Mix and blend ingredients A.
    2. Stir ingredients B until it turns creamy.
    3. Preheat ingredients C to 80°C and stir in ingredients B. Bring up temperature to 80°C again, then add ingredients A and mix well. Let it cool down.
    4. Blend ingredients E until fluffy. Fold into the above mixture. Then add ingredients D and blend until well mixed.
    5. Place one layer of sponge cake into a mousse mould. Pour the above kiwi batter on top. Keep in the fridge for at least 3 hours.
    6. Finally decorate the top with kiwi jam before serving.
