Ingredients
Sponge Cake

300 g of Sponge Cake Mix
5 Eggs
60 ml of Water

60 g of Melted Butter
Kiwi Mousse
A
15 g of Gelatin
50 ml of Water

150 g of Sugar
90 g of Egg Yolks

200 ml of Milk

150 g of Kiwi Puree

150 g of Fresh Cream

250 g of Kiwi Jam
Preparation
- Mix and blend ingredients A.
- Stir ingredients B until it turns creamy.
- Preheat ingredients C to 80°C and stir in ingredients B. Bring up temperature to 80°C again, then add ingredients A and mix well. Let it cool down.
- Blend ingredients E until fluffy. Fold into the above mixture. Then add ingredients D and blend until well mixed.
- Place one layer of sponge cake into a mousse mould.
Pour the above kiwi batter on top. Keep in the fridge for at least 3 hours.
- Finally decorate the top with kiwi jam before serving.
