Vegetarian Apricot Fruit Cake

    A

  • Castor Sugar
  • Salt
  • Water
  • Honey
  • Cooking Oil
  • Apricots
  • Pineapple Slices
  • Black Currants
  • B

  • High Protein Flour
  • Baking Powder
  • Sodium Bicarbonate
  • C

  • 100 g of Walnuts
  • 50 g of Pumpkin Seeds
  • Preparation

    1. Bring mixture ingredients (A) to boiler point.
    2. Continue to cook over low fire 10 minutes.
    3. Remove from fire and leave to cool.
    4. Fold in ingredients (B) and mix well. Lastly add in ingredients (C).
    5. Turn the mixture into a lined mould.
    6. Bake in a moderate oven at 180°C for 45 minutes.
