Ingredients
350 g/ 12 oz/ 3 cups of plain (all-purpose) flour
2 tsp of baking powder
1 tsp of ground mixed spice (allspice)
125 g/ 4½ oz/ ½ cup of butter, cut into small pieces
75 g/ 2¾ oz of ready-to-eat dried apricots, chopped
75 g/ 2¾ oz of dates, chopped
75 g/ 2'¾ oz of glace (candied) cherries, chopped
100 g/ 3½ oz of raisins
125 ml/ 4 fl oz of milk
2 eggs, beaten
grated rind of 1 orange
5-6 tbsp of orange juice
3 tbsp of runny honey
Method
- Grease a 20 cm/ 8 inch round cake tin (pan) and line the base with baking parchment.
- Sieve (strain) the flour, baking powder and ground mixed spice (allspice) into a large mixing bowl.
- Rub in the butter until the mixture resembles fine breadcrumbs.
- Carefully stir in the apricots, dates, glace (candied) cherries and raisins with the milk, beaten eggs, grated orange rind and orange juice.
- Stir in the honey and mix everything together to form a soft dropping consistency. Spoon into the prepared cake tin (pan) and level the surface.
- Bake in a preheated oven, 180°C/ 350°F/ Gas Mark 4, for 1 hour until a fine skewer inserted into the centre of the cake comes out clean.
- Leave the cake to cool 1 in the tin (pan) before turning out.
Baking Variation
- For a fruity alternative, replace the honey with 1 mashed ripe banana, if you prefer.
