Steamed Fruit Cake

Preparation Overview

  • Ingredients

    Fruit Cake

    A

  • 150 g of Butter
  • 150 g of Margarine
  • 10 g of Emulsifier (ovalette)
  • 220 g of Sugar
  • 2 g of Salt
  • B

  • 4 Eggs
  • C

  • 300 g of High Protein Flour
  • 1 g of Baking Powder
  • D

  • ˝ tsp of Mixed Spice
  • ˝ tsp of Vanillin
  • 1 tsp of Fruit Cake Paste
  • 180 g of Caramel
  • 500 g of Mixed Fruit
  • 50 g of Red Cherries
  • 50g of Green Cherries
  • Caramel

  • 150 g of Sugar
  • 80 g of Water
  • Method

    Cake Preparation

    1. Beat ingredients (A) on low speed for 1 minute.
    2. Scrape the bottom and sides before beating on high speed for 3 minutes.
    3. Add in egg gradually. Scrape and for 3 minutes on high speed.
    4. Then blend in the ingredients (C) on low speed for ˝ minute.
    5. Add in ingredients (D) and mix well.
    6. Pour the batter into a mould and cover with aluminum foil and use medium steam for 3 hours.

    Caramel Preparation

    1. Cook sugar over low heat till golden brown and add in water.
    2. Continue cooking until boiling. Let cool for later use.
