Ingredients
Fruit Cake
A
150 g of Butter
150 g of Margarine
10 g of Emulsifier (ovalette)
220 g of Sugar
2 g of Salt

4 Eggs

300 g of High Protein Flour
1 g of Baking Powder
D
˝ tsp of Mixed Spice
˝ tsp of Vanillin
1 tsp of Fruit Cake Paste
180 g of Caramel
500 g of Mixed Fruit
50 g of Red Cherries
50g of Green Cherries
Caramel
150 g of Sugar
80 g of Water
Method
Cake Preparation
- Beat ingredients (A) on low speed for 1 minute.
- Scrape the bottom and sides before beating on high speed for 3 minutes.
- Add in egg gradually. Scrape and for 3 minutes on high speed.
- Then blend in the ingredients (C) on low speed for
˝ minute.
- Add in ingredients (D) and mix well.
- Pour the batter into a mould and cover with
aluminum foil and use medium steam for 3 hours.
Caramel Preparation
- Cook sugar over low heat till golden brown and add in water.
- Continue cooking until boiling. Let cool for later use.
