Sesame Strawberry Cake Recipe

Ingredients

  • 225g butter
  • 225g brown sugar
  • 3 egg yolks
  • 225g all purpose flour
  • 1˝ tsp baking powder
  • 100g sesame seeds, baked until golden brown
  • 100ml fresh milk
  • 1 tsp strawberry emulco
  • 3 egg whites
  • A pinch of salt
  • 6 tbsp strawberry jam
  • Whipping cream and fresh strawberries for garnishing

Method

  1. Line an 8" spring form cake tin with greaseproof paper and grease the bottom of tin with butter.
  2. Beat butter together with brown sugar until creamy and light.
  3. Add in egg yolks gradually and continue to beat until it turns pale and fluffy.
  4. Fold in all purpose flour together with baking powder and stir evenly.
  5. Proceed to add in fresh milk, sesame seeds and strawberries emulco. Stir evenly. Set aside.
  6. In another large mixing bowl, beat the egg whites with salt until stiff peaks are formed.
  7. Fold the the egg whites batter into the mixture from Step 5. Blend evenly.
  8. Pour the end result batter into the greased cake tin.
  9. Bake the cake in a preheated oven at temperature of 180°C for 40 minutes or test the cake with skewer to check if the cake is fully cooked.
  10. After the cake has been removed from oven after baking, leave the cake to cool.
  11. Cut the cake horizontally into two separate layers. Spread the strawberry jam onto the layer of cake. Arrange the cake on top of the first one.
  12. Pipe some whipping cream on top and arrange some fresh strawberries on top of the cake as desired.
