| Orange Raisin Cake Recipe |

- 250g butter
- 200g superfine sugar
- 4 eggs
- 1 tsp vanilla essence
- 270g plain flour, sifted
- 1 tsp baking powder
- 100g raisins/ sultanas
- 1 orange, grated skin, juice extracted
- 3 tbsp concentrated orange juice

- Preset the oven to temperature of about 170°C.
- Beat the butter and sugar until light and creamy.
- Fold in the sifted plain flour and baking powder into the butter cream together with raisins. Mix evenly.
- Add in the orange juice and concentrated orange juice into the cake batter and blend evenly.
- Lay baking parchment on a round cake tin. Pour the batter into the cake tin.
- Bake the cake in oven for about 45 minutes until cooked.
- Remove cake from the oven and leave to cool on wire rack. Serve.
