Orange Raisin Cake Recipe

Ingredients

  • 250g butter
  • 200g superfine sugar
  • 4 eggs
  • 1 tsp vanilla essence
  • 270g plain flour, sifted
  • 1 tsp baking powder
  • 100g raisins/ sultanas
  • 1 orange, grated skin, juice extracted
  • 3 tbsp concentrated orange juice

Direction

  1. Preset the oven to temperature of about 170°C.
  2. Beat the butter and sugar until light and creamy.
  3. Fold in the sifted plain flour and baking powder into the butter cream together with raisins. Mix evenly.
  4. Add in the orange juice and concentrated orange juice into the cake batter and blend evenly.
  5. Lay baking parchment on a round cake tin. Pour the batter into the cake tin.
  6. Bake the cake in oven for about 45 minutes until cooked.
  7. Remove cake from the oven and leave to cool on wire rack. Serve.
