| Lemon Apple Cake Recipe |

- 190g sponge cake mix
- 4 eggs
- 30ml water
- 2 tbsp lemon juice

- 1 green apple, peeled and diced
Lemon Icing
- 225g icing sugar, sifted
- 2 tbsp lemon juice

- Firstly pre-grease an 8 inches round cake tin with melted butter and set aside. Preheat the oven to temperature of 190°C.
- Whisk ingredients A until light and fluffy. Add in B and mix well. Fold in C and stir well.
- Add in chopped apple and mix well. Pour mixture into the prepared cake tin.
- Bake in preheated oven for 20-30 minutes or until cooked.
- Remove and cool on wire rack.
- For lemon icing preparation, mix sifted icing sugar with lemon juice and beat until smooth. Pour over the cake, allowing it to run down the sides and decorate with chopped pistachios.
