| Honey Raisin Cake Recipe |

- 200g butter/ margarine
- 110g honey
- 150g water

- 225g self-raising flour
- 1 tsp baking powder
- 1 tsp ginger powder
- 1 tsp mixed spice
C
- 225g raisins/ sultanas, chopped finely
- 110g walnuts, chopped
- 75g almonds, chopped

- 2 eggs
- Icing sugar, for dusting

Method
|
- Prepare the oven by setting it to temperature of about 180°C.
- Mix ingredients on a lowly heated pan and cook (without reaching boiling point) until the butter is melted. Leave aside to cool
down.
- Sift ingredients B together.
- Add all ingredients C into B and mix well.
- Add the honey mixture and eggs into the dry mixture from Step 3 and blend evenly.
- Pour the cake batter into a greased rectangular cake tin of size 20 cm X 20 cm, flatten the cake.
- Bake in the oven for about an hour.
- If desired, dust some icing sugar on top of the cake after cool down.
