Honey Raisin Cake Recipe

Ingredients

 A
  • 200g butter/ margarine
  • 110g honey
  • 150g water
 B
  • 225g self-raising flour
  • 1 tsp baking powder
  • 1 tsp ginger powder
  • 1 tsp mixed spice
 C
  • 225g raisins/ sultanas, chopped finely
  • 110g walnuts, chopped
  • 75g almonds, chopped
 D
  • 2 eggs
  • Icing sugar, for dusting

Method

  1. Prepare the oven by setting it to temperature of about 180°C.
  2. Mix ingredients on a lowly heated pan and cook (without reaching boiling point) until the butter is melted. Leave aside to cool down.
  3. Sift ingredients B together.
  4. Add all ingredients C into B and mix well.
  5. Add the honey mixture and eggs into the dry mixture from Step 3 and blend evenly.
  6. Pour the cake batter into a greased rectangular cake tin of size 20 cm X 20 cm, flatten the cake.
  7. Bake in the oven for about an hour.
  8. If desired, dust some icing sugar on top of the cake after cool down.
