Green Pear and Almond Cake Recipe

Ingredients

 A
  • 220g sponge mix
  • 4 eggs
  • 40ml fresh milk
  • 1 tbsp milk powder
  • 1/2 tsp cinnamon powder
 B
  • 1 tsp glycerin oil
 C
  • 25ml melted margarine
  • 30ml corn oil
 Cake Topping
  • 5 green pears
  • 2 tbsp lemon juice
  • 50g almonds, slivered
 For Glazing
  • Melted apricot jelly

Method

  1. Grease a 9 inches round cake pan with oil. Preheat oven to 190C.
  2. Whisk ingredients A until light and fluffy. Add in B and mix well. Fold in C and mix well.
  3. Pour batter into the prepared cake pan and smooth the surface.
  4. Peel the pears, remove cores and cut into thin slices. Dip in lemon juice so they do not discolor.
  5. Arrange tje sliced pears over the cake and press well so that the cake mixture rises up between the pears. Sprinkle with almonds.
  6. Bake the cake in preheated oven for 30 minutes until cooked.
  7. Cool cake on the wire rack before brushing the cake surface with melted apricot jelly.
