| Green Pear and Almond Cake Recipe |

- 220g sponge mix
- 4 eggs
- 40ml fresh milk
- 1 tbsp milk powder
- 1/2 tsp cinnamon powder

- 25ml melted margarine
- 30ml corn oil
Cake Topping
- 5 green pears
- 2 tbsp lemon juice
- 50g almonds, slivered

Method

- Grease a 9 inches round cake pan with oil. Preheat oven to 190C.
- Whisk ingredients A until light and fluffy. Add in B and mix well. Fold in C and mix well.
- Pour batter into the prepared cake pan and smooth the surface.
- Peel the pears, remove cores and cut into thin slices. Dip in lemon juice so they do not discolor.
- Arrange tje sliced pears over the cake and press well so that the cake mixture rises up between the pears. Sprinkle with almonds.
- Bake the cake in preheated oven for 30 minutes until cooked.
- Cool cake on the wire rack before brushing the cake surface with melted apricot jelly.
