There are people who are on diet or watching over their weight, hence would shunned cakes like chocolate cakes or cheese cakes. Hence fruit cakes are suitable for these groups of people. There are variety of fruits that can be used to make fruit cakes. Typical fruits that are used are such as strawberry, mango, peach, cherry and others. When making fruit cakes, you do not necessary need to use fresh fruits that are bought from market. You can use canned fruits that are readily found in a lot of shops and supermarkets. However, you'll have to drain away the syrup from these tins of fruits before using them And you do not necessary have to throw away the syrup. You can still make use of this syrup in preparing the icing or mousse of the cake. This is because the syrup readily contains the original flavor of the fruits and you can even avoid using the any flavoring essence. If you want to make simple fruit cake that is without any cream or icing filling, you can always use dried fruits (such as raisins and cherries). You can also combine the dried fruits with some nuts to make a crunchy fruit and nut cake. You may want to be extra careful when using these dried fruits (mixed peel). This is because a lot of people ended up making a fruit cake with fruits falling at the bottom of the cake. To avoid this from happening, make sure you soak the dried fruits overnight in hot water, ensuring the fruits are light and floating. You may also need to chop up the dried fruits into bits if you prefer a finer texture of fruit cake.

Besides using real fruits, you can also use fruit jams that are widely available in the market. Fruit jam such as blueberry spread or strawberry jam are a perfect match to your fruit cake. You can merely slice your cake horizontally into two layers, and simply spread some generous amount of jams on the bottom layer and sandwich it with the second layer of cake. If you feel the fruit jams that are available in the market are too sweet, you always make your own fruit puree. Fruit puree can be easily made by just simply mashing your desired fruits into fine bits using food processor. Then you can add in some sugar according to your preference into the blended fruits and bring the mixture to boil in a pan.
