This is a cake recipe that must tried by any adventurous baking aficionado out there. Using durian to concoct your fruit cake is not new for most baking enthusiast in Asian region itself since durian fruit itself is quite popular in that region. However durian is not anyone's cup of tea as it has a stinky smell or strong odor that not everyone can bear with. Though it has a strong odor, the flesh of the fruit is sweet and rich with a kind of exotic flavor that cannot be found in any other fruit around the round. Opening the fruit itself from its husk is definitely not easy as its skin is spiky. If not careful, you may ended up injuring your hand. However you can buy those durian fruits that are readily packaged, without having the need to open up the fruit yourself. The fruit although rare or difficult to be found in region like North America or Europe, you may be lucky enough to find them somewhere in areas where Asian lives such as Chinatown. Before you try this recipe, make sure you that you like to eat durian itself first. Else you will likely throwing the cake away.

Durian Dream Cake Recipe

Ingredients

 Chiffon Cake Ingredients
  • 300g chiffon mix
  • 5 eggs
  • 50ml fresh milk
  • 1 tsp vanilla essence
  • 75ml corn oil/ melted butter
 Durian Filling
  • 350g fresh whipping cream

  • Durian Flesh
    Durian flesh, minus the husk
  • 150g durian flesh, pureed
  • ½ tbsp gelatin, dissolved in 50ml water over heat
  • 250g durian flesh, pureed
 Cake Topping
  • 60ml fresh milk
  • ¼ tbsp custard powder
  • 1 tbsp custard powder
  • 1 tsp gelatin, dissolved in 1 tbsp water over heat
  • 70g durian flesh, pureed
 Cake Decoration
  • 50g croquant rice
 Baking Utensils Needed
  • 9 inches loose-base round cake tin
  • 9 inches round cake tin

Direction

  1. Cake Tin: Line a 9 inches round cake tin. Preheated oven at 180ºC.

  3. In a mixing bowl, whisk chiffon mix, milk and eggs at high speed for 8 minutes until thick and creamy. Turn to low speed and add in essence and oil. Pour batter into tin and bake for 40 to 45 minutes. Invert cake and leave to cool. Slice cake into 3 layer horizontally.

  5. Cake Filling: Whisk cream of ingredients A on medium speed until soft peaks are formed. Stir in ingredients B and ingredients C and mix well.

  7. Cake Topping: Combine milk, custard powder and sugar in a saucepan. Stir over heat until mixture boils and has thickened. Add in gelatin mixture. Add in durian flesh puree.

  9. Assembly the Cake: Sandwich filling from Step 3 and topping ingredients from Step 4 in between layers of cakes. Spread top and sides with remaining cream. Leave to set before topping over top of cake. Chill well before serving.
