Cherry Fruit Cake Recipe

Ingredients

  • 250g plain flour
  • 250g superfine sugar
  • 250g margarine
  • 4 eggs (with yolks and whites separated)
  • 2 tbsp raisins/ sultanas, chopped finely
  • 5 red cherries, 5 green cherries, chopped finely before mixing with a little bit of flour

Method

  1. Beat sugar with margarine until it is creamy and pale. Then add in yolks one at a time and continue beating. Set aside for a while.
  2. In another clean bowl, beat egg whites until it is light and fluffy. Fold the egg whites batter into margarine mixture from Step 1.
  3. Fold in plain flour that is already sifted into the batter and stir evenly. Stir in the raisins and cherries.
  4. Pour the final batter into a pre-greased 8" cake tin and bake at 180C for 45 minutes.
  5. If unsure the cake is fully cooked, you can test the cake with a skewer.
  6. Leave the cake aside for cooling after baking before proceed to serve.
