| Banana Caramel Cake Recipe |

- 120g plain flour
- 1 tsp baking powder
- 90g caster sugar
- 50ml vegetable oil/ corn oil
- 2 eggs
- 1 banana
- 1 tbsp water
- 2 tsp water

- Set the oven to heat up to temperature of 180°C.
- Sift the plain flour and baking powder together into a medium mixing bowl.
- Cut the banana into thin slices.
- Bring the sugar and water to boil on a heated pan. Cook until the mixture turns brown. Turn off the heat.
- Add in 2 tsp of water and slices of banana into the caramel mixture. Leave the banana caramel to cool.
- Mix eggs, sugar and vegetable oil in a medium mixing glass bowl. Beat the mixture lightly.
- Pour some water into a deep pan, bring it to boil. Then place the glass bowl into the water and proceed to stir the mixture until the sugar has melted.
- Fold the flour into the egg batter, and mix evenly.
- Pour in the banana caramel and mix slowly. Pour the cake batter carefully into a greased 9 inches cake tin.
- Bake the cake in oven for about 35 minutes.
- After baking, remove the cake from oven and leave to cool.
- The cake is best served after left for overnight.
