Banana Cake with Cream Cheese Frosting Recipe

Ingredients

  • 225g unsalted butter
  • 150g superfine sugar
  • 2 eggs
  • 150g mashed bananas
  • 50g yogurt
  • 1 tsp vanilla essence
  • 260g all purpose plain flour
  • A pinch of salt
  • 1 tsp baking powder
 Cream Cheese Frosting
  • 340g cream cheese, softened
  • 150g icing sugar
  • 1 tsp lemon juice

Direction

 Banana Cake Preparation
  1. Preheat the oven at temperature of 180°C.
  2. Beat unsalted butter and superfine sugar until light and creamy.
  3. Add eggs gradually, one at a time and continue beating. Then add in the mashed bananas, yogurt, and vanilla essence.
  4. Fold in the sifted flour, salt and baking powder into the butter mixture. Mix the batter evenly.
  5. Pour the cake batter into a greased round cake tin pan of 22 cm diameter.
  6. Bake the cake in oven for about 40 minutes, remove cake from oven after baking and leave to cool on wire rack.
 Cream Cheese Frosting Preparation
  1. Beat cream cheese until lightly creamy before adding in icing sugar and lemon juice.
  2. Spread the cream cheese frosting on top of the banana cake. Serve.
