| Banana Blueberry Cake Recipe |

- 150g bananas, mashed
- 75g unsalted butter, softened
- 1 tsp vanilla essence
- 150g caster sugar
- 2 eggs, lightly beaten
- 110g fresh blueberries
- 50g sour cream
- 300g self-raising flour, sifted
- Some icing sugar for dusting

- Prepare the oven by setting the temperature of about 180°C.
- Beat unsalted butter, vanilla essence and sugar in a mixing bowl until light and creamy.
- Add eggs gradually, one at a time and mix evenly.
- Fold in the sifted flour, sour cream, mashed bananas and finally the fresh blueberries into the butter mixture.
- Blend the batter evenly and pour the batter into a greased 9 inches round cake tin.
- Bake the cake in oven for about 1 hour.
- Remove the cake from oven to cool down on wire rack.
- Dust some icing confectioners sugar on top of the cake, then proceed to serve.
