Banana Blueberry Cake Recipe

Ingredients

  • 150g bananas, mashed
  • 75g unsalted butter, softened
  • 1 tsp vanilla essence
  • 150g caster sugar
  • 2 eggs, lightly beaten
  • 110g fresh blueberries
  • 50g sour cream
  • 300g self-raising flour, sifted
  • Some icing sugar for dusting

Direction

  1. Prepare the oven by setting the temperature of about 180°C.
  2. Beat unsalted butter, vanilla essence and sugar in a mixing bowl until light and creamy.
  3. Add eggs gradually, one at a time and mix evenly.
  4. Fold in the sifted flour, sour cream, mashed bananas and finally the fresh blueberries into the butter mixture.
  5. Blend the batter evenly and pour the batter into a greased 9 inches round cake tin.
  6. Bake the cake in oven for about 1 hour.
  7. Remove the cake from oven to cool down on wire rack.
  8. Dust some icing confectioners sugar on top of the cake, then proceed to serve.
