Apple Cake with Raisin Recipe

Ingredients

 A
  • 190g sponge mix flour
  • 30g plain flour
  • 40ml water
  • 2 tbsp lemon juice
 B
  • 60g desiccated coconut
 C
  • 1 tbsp glycerin oil
 D
  • 50ml corn oil
 Cake Topping
  • 4 green apples
  • 1 lemon, with juice extracted
  • 3 tbsp raisins
  • Apricot jelly for glazing

Direction

  1. Grease a 9 inches square cake tin with oil and set aside. Preheat oven to 190°C.
  2. Whisk ingredients A until light and fluffy. Add ingredients B, C and mix well. Fold in ingredient D and mix well.
  3. Pour the batter into the prepared cake pan and smooth the surface.
  4. Peel the apples, divide the apple into quarters, then remove the cores. Cut them into thin slices and dip them in lemon juice.
  5. Sprinkle half the raisins over the cake and arrange apple slices on top. Sprinkle the rest of the raisins.
  6. Bake the cake for about 35 minutes until cooked. Remove the cake to cool after baking. Glaze the cake with apricot jelly.
