Pumpkin Cupcakes Recipe

Ingredients

  • 250 g of butter
  • 180 g of brown sugar
  • 4 eggs
  • 400 g of pumpkin flesh (steamed and mashed)
  • 300 g of self-raising flour
  • 1 tsp of baking powder
  • 1 tsp of ginger powder
  • 120 g of pistachios (toasted and chopped)
  • Baking Accessories Needed

    1. 1 piping bag
    2. 18 paper cups

    Preparations

    1. Preheat oven at 180°C.
    2. Beat butter and sugar until light. Add in eggs and mashed pumpkin.
    3. Add in dry ingredients and mix well. Lastly add in pistachios. Scoop the butter into piping bag.
    4. Pipe mixture from Step 3 into cups and arrange on baking trays. Bake for 30-35 minutes.
