Mini Butter Cupcake Recipe

Ingredients

  • 1 tsp baking powder
  • 280g plain flour
  • 300g butter
  • 120g icing sugar
  • 6 eggs
  • 160g sugar
  • 120g mixed fruit and raisins
  • 24 small floral cups, greased

Direction

  1. Sift baking powder and plain flour together.
  2. Beat butter and icing sugar till fluffy. Set aside.
  3. Separate egg yolks and egg whites for later use. Beat egg whites and sugar till stiff peaks form. Pour in egg yolks and beat till creamy yellow.
  4. Pour in butter mixture and mix well by hand. Pour in baking powder and plain flour and mix well to form batter.
  5. Place mixed fruit and raisins into small floral cups. Pour in batter. Bake at 180ºC for 15 minutes. Remove and cool.
