| Mini Butter Cupcake Recipe |

- 1 tsp baking powder
- 280g plain flour
- 300g butter
- 120g icing sugar
- 6 eggs
- 160g sugar
- 120g mixed fruit and raisins
- 24 small floral cups, greased

- Sift baking powder and plain flour together.
- Beat butter and icing sugar till fluffy. Set aside.
- Separate egg yolks and egg whites for later use. Beat egg whites and sugar till stiff peaks form. Pour in egg yolks and beat till creamy yellow.
- Pour in butter mixture and mix well by hand. Pour in baking powder and plain flour and mix well to form batter.
- Place mixed fruit and raisins into small floral cups. Pour in batter. Bake at 180ºC for 15 minutes. Remove and cool.
