Banana Poppy Seed Cupcakes Recipe

Ingredients

A

  • 250 g of butter
  • 100 g of caster sugar
  • 1 tsp of orange paste
  • 1 tsp of banana essence
  • 7 egg yolks
  • 200 g of ripen bananas (mashed)
  • 50 g of poppy seeds
  • 230 g of self-raising flour
  • ¼ tsp of baking soda
  • ½ tsp of baking powder
  • B

  • 280 g of egg whites
  • ¼ tsp of cream of tartar
  • 100 g of caster sugar
  • Utensils Needed

    1. 1 piping bag
    2. 20 paper cups
    3. Patty tins

    Directions

    1. Preheat oven at 180°C.
    2. Beat butter, sugar, orange paste and essence of ingredient A until light and fluffy. Add in yolks and beat until well combined. Add in bananas and poppy seeds. Leave aside.
    3. In another bowl, whisk egg whites, cream of tartar and sugar of ingredient B until stiff. Add in mixture from Step 2 with a hand held whisk. Add in sieved ingredients. Scoop into a piping bag. Pipe into cups and bake for 25-30 minutes.
