Ingredients

250 g of butter
100 g of caster sugar
1 tsp of orange paste
1 tsp of banana essence
7 egg yolks
200 g of ripen bananas (mashed)
50 g of poppy seeds
230 g of self-raising flour
¼ tsp of baking soda
½ tsp of baking powder
B
280 g of egg whites
¼ tsp of cream of tartar
100 g of caster sugar
Utensils Needed
- 1 piping bag
- 20 paper cups
- Patty tins
Directions
- Preheat oven at 180°C.
- Beat butter, sugar, orange paste and essence of ingredient A until light and fluffy. Add in yolks and beat until well combined. Add in bananas and poppy seeds. Leave aside.
- In another bowl, whisk egg whites, cream of tartar and sugar of ingredient B until stiff. Add in mixture from Step 2 with a hand held whisk. Add in sieved ingredients. Scoop into a piping bag. Pipe into cups and bake for 25-30 minutes.
