White Chocolate Pistachio Cookies Recipe

Ingredients

  • 180 g butter
  • 1/3 cup caster sugar
  • 1½ cup plain flour
  • 1 cup rice bubble, crunched
  • ¼ cup dried coconut
  • 75 g melted white chocolate
  • 1/3 cup pistachio nuts, chopped
  • Paper cases

Method

  1. Beat butter and sugar until fluffy.
  2. Sift plain flour gradually into the mixture.
  3. Add crunched rice bubble and dried coconut.
  4. Spoon 1 teaspoon of the mixture into a paper case.
  5. Bake until golden brown.
  6. Dip into white chocolate and top with little pistachio nuts.
