| Rice Bubble Cookies Recipe |
Ingredients |
- 200g butter
- 180g rice bubble
- 1 cup sugar
- 1 cup dried coconut
- 1 cup self-raising flour
- 1 cup currants
- 2 eggs
- ˝ tsp vanilla essence
- Paper cases

Direction

- Beat plain flour and butter in a bowl until fluffy.
- Add egg and vanilla essence. Mix well.
- Add ˝ of the rice bubble with self-raising flour and currants to the mixture.
- Spoon 1 tsp to a paper case.
- Sprinkle a little rice bubble on top.
- Repeat the process.
- Bake until golden brown.
