Pineapple Cookie Recipe

Ingredients

  • 600g plain flour
  • 175g butter
  • 50ml cold water
  • 2 eggs
  • A pinch of salt
 Pineapple topping
  • Tart jam
  • 2 pineapples
  • 600g granulated sugar
  • ˝ tsp cinnamon powder

Preparation

 Preparing the tart jam
  1. Peel pineapple skin and grated the flesh into a sauce pan.
  2. Heat it on a stove with granulated sugar and cinnamon powder.
  3. Stir well until ingredients thicken.
  4. Leave to cool.
 Cookie Base
  1. Mix egg with plain flour and butter.
  2. Add cold water with salt gradually until dough soften.
  3. Cover dough with plastic and keep in the freezer for a while.
  4. Roll dough and cut using a fluted cutter.
  5. Press ˝ tsp tart jam into the center of each cookie.
  6. Bake until golden brown.
