| Nutty Coffee Cookies Recipe |
Ingredients |
- 125 g butter
- ½ cup brown sugar
- 1 egg
- 2 tablespoons coffee powder
- 1 tablespoon hot water
- 1¼ cups plain flour
- ½ cup self-raising flour
- 15 g spry
- 60 g chocolate
- 60 g groundnuts
- 2 tablespoons icing sugar
- 1 teaspoon instant coffee mix

Topping Preparation
- Heat spry with chocolate and instant coffee mix.
- Stir all the time.
- Leave to cool.
Cookies Preparation
- Beat butter, sugar and egg until light and fluffy.
- Mix the coffee powder with hot water and add to the mixture.
- Sift plain flour gradually into the mixture.
- Mix well until it becomes a soft dough.
- Roll the dough to ½ inch and shape accordingly.
- Bake for 15 minutes.
- Cool in the wire rack.
- Dip in chocolate topping and sprinkle a little icing sugar.
