| Coconut Oatmeal Cookies Recipe |
Ingredients |
Makes about 8 dozen cookies
- 2 cups brown sugar
- 2 cups granulated sugar
- 2 cups shortening
- 4 whole eggs
- 2 cups oats
- 4 cups flour
- 2 cups shredded coconut
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons salt
- 2 teaspoons vanilla extract
- 1 cup chopped pecans

Method

- Blend the brown and granulated sugar with shortening.
- Add to this the eggs, oats, flour, coconut, baking soda, baking powder, salt, vanilla and pecans. Mix well.
- Roll into balls, place on cookie sheets, and freeze for up to 2 weeks. When ready to bake, preheat the oven to 350ºF.
- Remove the cookies from the freezer, allow to thaw slightly, then bake for about 15 minutes, until golden brown.
