Coconut Oatmeal Cookies Recipe

Ingredients

 Makes about 8 dozen cookies
  • 2 cups brown sugar
  • 2 cups granulated sugar
  • 2 cups shortening
  • 4 whole eggs
  • 2 cups oats
  • 4 cups flour
  • 2 cups shredded coconut
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans

Method

  1. Blend the brown and granulated sugar with shortening.
  2. Add to this the eggs, oats, flour, coconut, baking soda, baking powder, salt, vanilla and pecans. Mix well.
  3. Roll into balls, place on cookie sheets, and freeze for up to 2 weeks. When ready to bake, preheat the oven to 350ºF.
  4. Remove the cookies from the freezer, allow to thaw slightly, then bake for about 15 minutes, until golden brown.
