Coconut Milk Cookie Recipe

Ingredients

  • 600g corn flour
  • 1 cup plain flour
  • 2 cup castor sugar
  • 4 eggs
  • 2 coconuts, extracted the milk
  • Pandan leaves
  • Cinnamon stick

Preparation

  1. Mix corn flour and plain flour. Fry the mixture to lighten texture.
  2. Beat the eggs and sugar in a bowl.
  3. Heat the coconut milk with pandan leaves and cinnamon stick.
  4. Add egg mixture and fried flour with the hot coconut milk gradually.
  5. Knead into a dough.
  6. Roll to about ˝ inch and use a desire cutter to cut for design.
  7. Bake in a moderate heated oven until golden brown.
