| Cashew Nut Cookies Recipe |

- 270 g plain flour
- 130 g corn flour
- 180 g castor sugar
- 180 g margarine
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
- 1 egg
- 1 egg yolk

Method

- Sift plain flour, corn flour and baking powder together.
- Beat margarine and sugar until fluffy.
- Add egg and vanilla essence. Mix well.
- Gradually add the sifted flour. Mix well.
- Knead the dough and shape into a ball.
- Top with cashew nuts and place on a baking tray.
- Brush lightly with egg yolk.
- Bake until golden brown.
