| Almond Cole Cookie Recipe |
Ingredients |
- 200g icing sugar
- 170g unsalted butter
- 285g all purpose flour
- 170g corn flour
- 140g almond powder
- 4 egg yolks
- 1 tsp vanilla essence
- 1 tsp almond paste
- 1 cup almond flakes

Preparation

- Cream butter and sugar.
- Add egg yolk, vanilla essence and almond paste.
- Sift all purpose flour, corn flour and almond powder. Mix well.
- Leave to set for an hour.
- Knead and shape accordingly.
- Top with almond flakes and brush lightly with egg yolk.
- Bake for 12 to 15 minutes on 180ºC until golden brown.
