| French Chocolate Cake Recipe |

- 400g egg whites
- 244g caster sugar
- 2g salt

- 76g cocoa powder
- 200g warm water

- 78g butter
- 76g dark chocolate

- 144g low protein flour
- 44g corn flour

- 222g egg yolks
- 22g golden syrup
G: Cake Filling
- 300g coffee cream
- 350g chocolate ganache

Preparation

- Prepare the oven by preheating it at temperature between 150°C and 200°C.
- Beat ingredients A until fluffy or soft peaks are formed.
- Bring the water from ingredients B to hot at about 70°C. Add in cocoa powder and mix evenly.
- Melt dark chocolate slowly, then add in butter from ingredients C evenly.
- Add in ingredients D, E and F into the batter and mix evenly.
- Pour the cake batter into cake tin and bake at the preheated oven for about 22 to 25 minutes.
- Remove the cake from oven after baking and let it cool on the wire rack.
- Split the cake into 3 separate layers horizontally.
- Spread each layer of cakes with coffee cream and sandwich the cake nicely.
- After assembling the cake, spread the top of the cake with chocolate ganache.
