French Chocolate Cake Recipe

Ingredients

 A
  • 400g egg whites
  • 244g caster sugar
  • 2g salt
 B
  • 76g cocoa powder
  • 200g warm water
 C
  • 78g butter
  • 76g dark chocolate
 D
  • 67g vegetable oil
 E
  • 144g low protein flour
  • 44g corn flour
 F
  • 222g egg yolks
  • 22g golden syrup
 G: Cake Filling
  • 300g coffee cream
  • 350g chocolate ganache

Preparation

  1. Prepare the oven by preheating it at temperature between 150°C and 200°C.
  2. Beat ingredients A until fluffy or soft peaks are formed.
  3. Bring the water from ingredients B to hot at about 70°C. Add in cocoa powder and mix evenly.
  4. Melt dark chocolate slowly, then add in butter from ingredients C evenly.
  5. Add in ingredients D, E and F into the batter and mix evenly.
  6. Pour the cake batter into cake tin and bake at the preheated oven for about 22 to 25 minutes.
  7. Remove the cake from oven after baking and let it cool on the wire rack.
  8. Split the cake into 3 separate layers horizontally.
  9. Spread each layer of cakes with coffee cream and sandwich the cake nicely.
  10. After assembling the cake, spread the top of the cake with chocolate ganache.
