Chiffon cake is generally light and fluffy. The cake is made with high amount of eggs. One of the preparation procedure is always having the egg yolks and egg whites being separated. Then the egg whites are separately beaten with sugar until light and fluffy before being mixed with egg yolks mixture that is beaten separately. Chiffon cake mixture is also typically mixed with vegetable or cooking oil, to ensure that the cake is not too dry and to give the cake a little bit of moisture.

With the bubbles from the egg whites when beaten, the chiffon cake is really dainty and elegant. It will melt instantly when you put it into your mouth. It is intangible like a light cloud floating in an autumn sky. The former statement may feel too lyrical.
