Ingredients
Cheese Mousse
A
500 g of Mascarpone Cheese
B
6 Egg Yolks
100 g of Castor Sugar
C
20 g of Gelatin
30 ml of Hot Water

250 g of Whipped Cream
50 ml of Coffee Liqueur
Coffee Syrup

80 g of Sugar
80 ml of Water
10 g of Instant Coffee
10 ml of Coffee Oil
50 ml of Coffee Liqueur
Garnishing
60 g of Cocoa Powder
10 pcs of Ladies Finger Biscuits
Directions
Cheese Mousse Preparation
- Double boil ingredients A till soft and smooth.
- Blend ingredients B, then double boil till lukewarm.
- Mix ingredients C until gelatin is well dissolved. Add in mixture from Step 2 and blend thoroughly.
- Put it into bowl of ice water. Keep stirring so as to bring down the temperature.
- Whip ingredients D, then add into above and mix till well incorporated.
Coffee Syrup Preparation
- Cook ingredients E till sugar dissolves. Add in coffee liqueur.
Finishing the Cake
- Place a layer of sponge cake into mousse mould.
- Brush coffee syrup on cake.
- Then pour ˝ of the mousse on top.
- Dip the ladies fingers biscuits into the coffee syrup before arranging them on the mousse.
- Finally cover it with the balance of the mousse.
- Sprinkle cocoa powder on top and freeze for 3 hours before serving.
