Strawberry White Wine Cheese Cake Recipe

Ingredients

BASE

  • 100 g of digestive biscuits, crushed
  • 70 g of melted butter
  • CREAM CHEESE MIXTURE

    A

  • 250 g of cream cheese
  • 30 g of caster sugar
  • 1 cup of strawberry yogurt (150g)
  • 6 strawberries, diced
  • 60ml of white wine
  • 100 g of non-dairy whipping cream, whipped
  • 1 tbsp of gelatin powder, mixed with 3 tbsp water and double—boiled until dissolved
  • Preparation

    CHEESE CAKE BASE

    1. Combine biscuit crumbs with melted butter.
    2. Press into a 7" cake ring tin.
    3. Chill in the fridge for 30 minutes until firmed.

    CREAM CHEESE MIXTURE

    1. Beat cream cheese with caster sugar and yogurt until smooth.
    2. Add diced strawberries, white wine and stir well.
    3. Add whipping cream and stir well.
    4. Lastly mix in gelatin mixture and pour onto prepared crust.
    5. Chill overnight in the fridge before serving.

    Quick Baking Guide

    1. Use sparkling fruit juice to substitute white wine if the cheesecake will be serve to the kids or if you want to avoid alcohol.
