Simple Chocolate Cheese Cake Recipe |
Ingredients |
Base
- 250g digestive cookies, crushed
- 75g unsalted butter, melted
Cheese Filling
- 250g cream cheese
- 125g whipping cream
- 75g caster sugar
- 2 egg yolks
- ˝ tsp vanilla essence
- 2 tbsp all purpose flour
- 150g chocolate, melted
- 2 egg whites
- 25g caster sugar

Method

- Heat up the oven first by presetting it to temperature of 180°C.
- Combine both the digestive cookies and melted butter evenly. Press the cookies base onto an 8" spring form cake pan. Keep the base in fridge for about half hour.
- In another mixing bowl, beat the egg whites and caster sugar together until soft peaks are formed. Set aside.
- For cheese filling preparation, beat the cream cheese and caster sugar until light and creamy. Add in whipping cream and continue to beat. Stir in egg yolks, vanilla essence and egg whites batter from Step 3 and blend evenly.
- Fold sifted all purpose flour and melted chocolate into the cheese filling and mix evenly.
- Pour the cheese filling into the cake pan that is already filled with cookies base.
- Bake the cheese cake for about 40 minutes. Turn off heat after baking and leave the cake to cool in oven with oven door slightly ajar.
