Pineapple Cheesecake Recipe

Ingredients

  • 125 grams unsalted butter
  • 125 grams cream cheese
  • 110 grams caster sugar
  • 3 eggs
  • 140 grams low protein flour
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • ¼ teaspoon salt
  • 60 milliliter whipping cream
  • 100 grams chopped pineapple
  • 50 grams almond sliver

Method

  1. Beat butter, cream cheese and sugar until light and creamy. Add in eggs, one at a time, beating well after each addition.
  2. Sift flour, baking powder, soda and salt together, fold into cheese mixture, mix well.
  3. Pour in whipping cream until well combined. Lastly add in chopped pineapple.
  4. Spoon the batter into the tray. Sprinkle almond sliver on top. Bake in preheated oven at 180ºC for 30 minutes or until cooked.
