| Pineapple Cheesecake Recipe |
Ingredients |
- 125 grams unsalted butter
- 125 grams cream cheese
- 110 grams caster sugar
- 3 eggs
- 140 grams low protein flour
- ½ teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- ¼ teaspoon salt
- 60 milliliter whipping cream
- 100 grams chopped pineapple
- 50 grams almond sliver

Method

- Beat butter, cream cheese and sugar until light and creamy. Add in eggs, one at a time, beating well after each addition.
- Sift flour, baking powder, soda and salt together, fold into cheese mixture, mix well.
- Pour in whipping cream until well combined. Lastly add in chopped pineapple.
- Spoon the batter into the tray. Sprinkle almond sliver on top. Bake in preheated oven at 180ºC for 30 minutes or until cooked.
