Passion Fruit Cheese Cake Recipe

Ingredients

BASE

  • 150 g of soda cream crackers, crushed
  • 100 g of melted butter
  • CREAM CHEESE MIXTURE

    A

  • 500 g of cream cheese
  • 100 g of caster sugar
  • 3 passion fruits, used pulp only
  • B

  • 200 g of non-dairy whipping cream, whipped
  • ˝ tbsp of gelatin powder, mixed with 4 tbsp water and double-boiled until dissolved
  • Preparation

    CHEESE CAKE BASE

    1. Mix cracker crumbs with melted butter evenly.
    2. Press into a 9" round spring form tin and chill in the fridge for 30 minutes or until firmed.

    CREAM CHEESE MIXTURE

    1. Beat cream cheese and sugar until smooth.
    2. Add in passion fruit and mix well.
    3. Mix in whipped cream in 3-4 batches.
    4. Lastly add in geletine mixture and stir well.
    5. Pour the mixture into the prepared crust.
    6. Chill overnight in the fridge before serving.
