London Cheese Cake Recipe

Ingredients

  • 150g digestive cookies, crushed
  • 75g butter, unsalted, melted
  • 500g cream cheese
  • 110g caster sugar
  • 3 eggs
  • 3 egg whites
  • 1˝ tbsp vanilla essence
  • 1˝ tbsp lemon juice
 Cake Topping
  • 135ml sour cream
  • 1 tbsp caster sugar
  • ˝ tsp vanilla essence

Direction

  1. Prepare the oven by preheating it at temperature of 180°C.
  2. Combine the crushed digestive cookies with melted butter in a large mixing bowl. Mix evenly.
  3. Using a big spoon, flatten the digestive cookies base onto a greased cake tin.
  4. Leave the cake base in the fridge for a while so that it set.
  5. Beat the cream cheese until lightly creamy then gradually add caster sugar and continue to beat until it become light and fluffy. Set aside.
  6. Proceed to beat eggs and egg whites together using k-beater.
  7. Lastly add in vanilla essence and lemon juice and beat evenly until soft peaks are formed.
  8. Pour the batter onto the cake base of digestive cookies.
  9. Cover the cake tin with aluminum foil and place the cake in a oven tray filled with hot water and steam bake for about 50 minutes in a preheated oven.
  10. To prepare the topping, place all topping ingredients in a mixing bowl and whisk evenly.
  11. After steam baking the cake for 50 minutes, spread the topping on the cake before steam baking it for another 15 minutes.
  12. After baking, let it cool for some time before keeping it in the fridge for another half hour before serving.
