Light Cheese Cake Recipe

Ingredients

  • 500g cream cheese
  • 100g caster sugar
  • 1 tsp lemon juice
  • 3 egg yolks
  • 200g whipping cream
  • 30g all purpose flour, sifted
  • 10g corn flour, sifted

  • 3 egg whites
  • 30g caster sugar

Method

  1. Beat cream cheese until smooth, then add in sugar and continue to beat until light and creamy.
  2. Stir in lemon juice and blend evenly.
  3. Add in egg yolks gradually into the cream cheese mixture and continue to beat evenly.
  4. Proceed to add in whipping cream slowly and beat evenly as usual.
  5. Fold in the all purpose flour and corn flour and stir evenly. Set aside for a while.
  6. In another mixing bowl, beat ingredients together until soft peaks are formed.
  7. Pour the egg whites batter into the cream cheese mixture and stir evenly.
  8. Pour the cake batter into an 8" spring form cake that is already layered with baking parchment.
  9. Place the cake tin on an oven tray that is filled with water.
  10. Steam bake the cake in a preheated oven at temperature of 170°C for about an hour.
  11. Leave the cake in oven after baking with oven door slightly ajar before serving.
