Light Cheese Cake Recipe |

- 500g cream cheese
- 100g caster sugar
- 1 tsp lemon juice
- 3 egg yolks
- 200g whipping cream
- 30g all purpose flour, sifted
- 10g corn flour, sifted

Method

- Beat cream cheese until smooth, then add in sugar and continue to beat until light and creamy.
- Stir in lemon juice and blend evenly.
- Add in egg yolks gradually into the cream
cheese mixture and continue to beat evenly.
- Proceed to add in whipping cream slowly and beat evenly as usual.
- Fold in the all purpose flour and corn flour and stir evenly. Set aside for a while.
- In another mixing bowl, beat ingredients together until soft peaks are formed.
- Pour the egg whites batter into the cream cheese mixture and stir evenly.
- Pour the cake batter into an 8" spring form cake that is already layered with baking parchment.
- Place the cake tin on an oven tray that is filled with water.
- Steam bake the cake in a preheated oven at temperature of 170°C for about an hour.
- Leave the cake in oven after baking with oven door slightly ajar before serving.
