Kiwi Fruit Cheese Cake Recipe

Ingredients

 Cheese Cake Base
  • 200g digestive cookies, crushed
  • 2 tbsp butter, softened
 Cheese Filling
  • 250g cream cheese
  • 300ml kiwi fruit yoghurt
  • 125ml non-flavor yoghurt
  • 200g caster sugar
  • 4 kiwi fruits
 Gelatin Mixture
  • 100ml hot water
  • 1 tbsp gelatin powder
 Cake Garnishing
  • Kiwi fruit slices
  • 1 tbsp warm water

Direction

  1. Lay baking parchment on an 8" cake tin.
  2. Mix crushed digestive cookies with butter evenly. Press the cake base onto the cake tin evenly.
  3. Beat cream cheese and caster sugar until creamy.
  4. Add in kiwi fruit yoghurt and plain yoghurt and stir evenly. Set aside for a while.
  5. Mix the gelatin powder into hot water and stir until gelatin is dissolved.
  6. Pour the gelatin mixture into the cream cheese filling, stir evenly.
  7. Pour the cream cheese filling into cake tin and refrigerate the cake for few hours.
  8. Take out the cake from fridge and garnish the cake with kiwi fruit slices. Proceed to serve.
