Ingredients
For Cheese Cake
A
5 egg yolks
1 tsp of vanilla essence
˝ cup of caster sugar
˝ tsp of salt
˝ cup of water
˝ cup of oil
175 g of high ratio flour
2 tsps of baking powder
B
5 egg whites
˝ tsp of cream of tartar
˝ cup of caster sugar
Cheese Filling
1 tin mixed fruit cocktail (strained and reserve 60 ml of juice)
1˝ tbsps of gelatin
250 g of cream cheese
70 g of caster sugar
150 ml of fresh whipping cream (whipped)
Cake Decoration
300 ml of fresh cream (whipped)
Some fresh fruits
Some grated cooking chocolate
Directions
Cheese Cake
- Line a 9" round cake tin. Preheat oven at 170°C.
- Hand whisk ingredient A in a bowl until well-combined. Leave aside.
- Whisk egg whites and cream of tartar of ingredient B until foamy. Add in sugar and whisk until stiff. Combine with mixture from Step 2. Pour into tin and bake for 40-45 minutes.
- Invert cake to cool before slicing into 3 layers horizontally.
Cheese Cake Filling
- Sprinkle gelatin into juice. Double boil until gelatin has dissolved.
- In a mixer, beat cheese and sugar until creamy.
- Fold in gelatin mixture from Step 1, whipped cream and drained fruit cocktail. Divide into two portions.
Assembling the Cake
- Place a layer of cake into a 9" loose base cake tin. Top with one portion of filling.
- Repeat with second layer of cake and filling. Lastly place third layer of cake on top of filling. Refrigerate until set before decorating.
Cake Decoration
- Spread whipped cream to cover the whole cake. Decorate with some chocolate, grated chocolate and fresh fruits. Chill before serving.
