Cotton Cheesecake

Baking Overview

  • Oven Temperature : 150C
  • Baking Duration : 60-70 minutes

  • Ingredients

    A

  • 60 g of Milk
  • 160 g of Cream Cheese
  • 30 g of Butter
  • B

  • 4 Egg Yolks
  • 10 g of Lemon Juice
  • C

  • 30 g of Superfine Flour
  • 30 g of Corn Flour
  • D

  • 4 Egg Whites
  • 100 g of Sugar
  • 2 g of Salt
  • Directions

    1. Double boil ingredients A, whisk till it is smooth and set it aside.
    2. Add in ingredients B, stir well, then fold in ingredients C and mix till evenly blended.
    3. Use medium speed to beat ingredients D till soft peaks are formed.
    4. Fold lightly into mixture resulted from Step 2.
    5. Preheat oven to 150C. Steam bake for 60-70 minutes.
    6. When cake is done, invert it for 5 mins before unmoulding the cake.
    7. This is to prevent cake from sinking in the middle.
