Ingredients
CHEESE CAKE BASE
150 g of plain chocolate biscuit (crushed)
50 g of nibbled almonds (toasted)
2 tbsps of brown sugar
120 g of butter (melted)
CREAM CHEESE FILLING
750 g of cream cheese (at room temperature)
75 g of brown sugar
250 g of dark cooking chocolate (melted by double-boiling)
250 ml of fresh whipping cream
50 ml of concentrated orange juice
30 g of corn flour
4 eggs (beaten)
2 oranges rind (grated)
Directions
CAKE BASE
- Preheat oven at 160°C. Mix melted butter with dry ingredients until well combined. Press onto a 9" loose base cake tin. Refrigerate until set.
CHEESE FILLING
- Beat cheese and sugar until creamy. Add in whipping cream and orange juice.
- Spoon some mixture into melted chocolate and pour back. Add in corn flour.
- Lastly add in eggs and rind. Pour batter onto set base and steam bake for 1 hour.
- Leave cake in oven with door closed for 30 minutes but temperature turned off.
- Remove cake from oven and let cake cool at room temperature. Refrigerate for 6 hours before serving.
